Halloween is over, Winter is rolling in and the need to keep warm is an ever impending concern! I thought I'd give something warming and seasonal a try, pumpkin soup! Super simple to make and very comforting on a cold day.
You will need
- 1 onion
- half a pumpkin (I had a medium sized one)
- 1 red pepper
- tsp smoked paprika
- tsp chilli flakes
- Stock (I used chicken, but veg would be good too)
For the top of the soup
- pumpkin or sunflower seeds
Super quick and simple, fry and soften the onion with the chilli flakes and smoked paprika, add the pumpkin and pepper and cover with chicken stock. Simmer until they are soft. Blend until smooth.
If you to add a little crunch, like I do, throw on some croutons and some fried seeds.
