Grapefruit and Mint Sorbet

I managed, after an indulgent visit to the market, to be the proud owner of 10 grapefruits! I love a grapefurit for breakfast but even I didn't think I could eat that many, and so I thought I'd try something new. Inspired by Wit and Vinegar I thought I'd try this super easy Grapefruit and Mint sorbet.

You need a day to prepare it and let it freeze, but it takes 10 minutes to make!

For the sorbet you'll need : 

7 Pink or Red Grapefruits 

150g of white sugar

8-10 mint leaves 

An egg white

First up you'll need to juice the grapefruit (and possibly sieve out the pips!). Then put about 1/3 of the juice, the mint leaves and the sugar into a pan and bring to a simmer. Keep stirring until the sugar has disolved. Take the pan off the heat and leave the flavours to infuse. 

After about 10 minutes strain out the mint leaves, and add the rest of the juice. Stir and then you're ready to freeze it the first time! 

I left mine in the freezer over night and in the morning took it out for step 2... adding the egg white.

For step 2, I used a Magimix. Scrape out the frozen mixture and put it in the magimix, it doesn't have to be in small pieces, but it will help with the mixing if it is.

Give the mixture a quick wizz before adding the egg white. It doesn't need to be smooth! Then add the egg white and wizz it until smooth.

Place the mixture back in the container you froze it in, and leave for a few hours or over night.
