If the Queen Came for Tea
With the Queen's 90th birthday a few weeks ago and it being 5 years since Will and Kate tied the knot it seemed fitting to celebrate! I'm a sucker for a cake, and I wanted to try something a little unusual so I made some in miniature! My brother demanded cheesy scones, (he's the scone master), and with those two things we expanded to a Royal Picnic hopefully fit for a queen!
We put up the Union Jack bunting, blew up some balloons and laid up a feast!
Cheese scones are my fave; there's something nice about having a change from the traditional clotted cream and jam combo...
It wouldn't be a queen-worthy picnic without some cucumber sandwiches!
Mini victoria sponge, stuffed with clotted cream and raspberry jam. Really simple to make, just use a normal cake recipe but put the mixture into lined mousse rings instead of cake tins. Slice them in half and ice, voila!
Finally a cup of tea, and an English rose. Congratulations HRH!
