Unbeetable Beetroot Soup
After yesterday's weather, miserable cold rain, I thought I needed a Monday pick me up... something comforting and warming, and quick and easy to make. It helped I happened to have 4 beetroots in my larder! This beetroot soup is delicious, nourishing, and has a slight kick which makes it totally different from anything else I've ever tasted.
For the soup you'll need:
- 4 raw beetroot, (although you could used pre-cooked, I'd use 2 packets of supermarket size)
- 1 onion
- 1 chicken stock cube
- 1/2 a teaspoon of horseradish sauce
First up, peel and cut up the beetroot into small cubes, I was using a soup maker (It's changed my life, but not strictly necessary).
Then chop up the onion, and place both into the soup maker or saucepan. Add enough water to cover the beetroot and add the stock and horseradish. Cook until the beetroot is soft and then blend.

Once your soup is made, serve with a dollop of cream and some parsley for decoration. I always have a bread roll on the side; I mean, what's a bowl of soup without bread and butter?! Yum!
