Summer is here, well kind of (ignore the rain), and everywhere I look on pinterest lollipops are being made... so I thought I'd have a go! The recipe is below and these are actually delicious; even my dad enjoyed one! They are super simple to make and all you will need is a lollipop mould, which you can get in most kitchen shops.
- 400g of Strawberries (roughly 1 punnet)
- 150g of Raspberries
- 3 Grapefruit
- 3 tbs of sugar
- 300ml of Prosecco
Put the raspberries and strawberries into a blender and blend until smooth. Then sieve the mixture into a bowl, so you remove all the pips!
Juice the grapefruits, and put the juice into a small saucepan with the sugar. Bring to the boil and allow to reduce slightly. Then leave to cool.
Pour the prosecco into the bowl with the raspberry and strawberry mixture, and add the cooled grapefruit juice. Stir and pour into your ice lolly moulds. For photographic purposes I put in wooden lolly pop sticks, but most mould come with reusable sticks!
Leave to freeze for a few hours and enjoy!
