Passion Fruit Posset
Easter is just around the corner and with a big family gathering, comes puddings a plenty! I love this pudding, its super easy and quick to make and perfect for Easter!
For the posset you will need
- 350g caster sugar, plus a tbsp extra for decorating the stars
- 850ml double cream
- 8 ripe passion fruit (look for wrinkly ones)
- 2 tbsp lime juice
For the Lime and Elderflower Biscuits you will need
- 100g softened butter
- 50g caster sugar
- 3 tbsps Elderflower Cordial
- 1 lime
- 200g plain flour
Start by making the posset, put the sugar, and cream into a saucepan. Heat it gently stirring all the time. Once the sugar has disolved bring the mixture to a boil, simmering fiercely for 3 minutes (keep stirring to avoid it sticking) and then remove from the heat.
Next scrape the passion fruit seeds out of the fruit and into a magimix. Give them a quick wizz to separate the seeds. (You can skip this step and go straight to sieving them if you don't have a food processor)
Sieve the passion fruit seeds and juice and pour into the sugar and cream mixture. Followed by 2 table spoons of lime juice. This should thicken the mixture, you can now pour it into ramekins or bowls whichever you prefer. Chill for a couple of hours before serving.
To make the biscuits pre heat the oven to 180 degrees. Then cream together the sugar, butter, elderflower juice and lime zest. Then add the flour. You can do this by hand, but I cheated and used by magimix when makes it in twice the time. Once the mixture has formed a dough you are ready to roll it out.
Roll out the dough, using a little extra plain flour to stop it sticking to the rolling pin or board. I decided to make them into Easter biscuits so used bunnies and stars! Then bake them in the oven for between 10 - 12 minutes.
Once they are cooled you're ready to serve them. I left mine as they were, or you could dust them with icing sugar. I also served mine with some strawberries and raspberries to add some colour. Enjoy!
